Summary: Soybeans, Glycine max (L.) Merrill harvested when the pods are green but the green beans fill the pod cavity are vegetable soybeans. Vegetable soybeans have large seed size (. 30 g/l 00 seeds), nice green pods and beans, higher percent of 2 and 3 seeded pods, the length and width of the green pods are 4.5cm and 1.4 cm respectively, and have slightly sweet taste. In Japan, the whole plants are harvested with pods attached to the stem and marketed to retain fresh quality. Pods and shelled beans are marketed either as fresh or frozen. Japan, China, Taiwan, and Korea are the major consumers of vegetable soybean. Japan imports about 70,000 t annually primarily from China, Taiwan, Thailand, and Indonesia. Nutritionally vegetable soybeans are much better than sweet peas. It is rich in protein, cholesterol free fat, vitamin B, vitamin E, lecithin and isoflavones. The green pods are boiled and only the green beans are consumed and the shell is discarded. The shelled green beans can be cooked similar to sweet peas. The World Vegetable Center has developed improved vegetable soybean varieties adapted to diverse agro-climatic conditions. Under temperate conditions, vegetable soybean can be harvested in 80 to 100 days after sowing. The total biological yield of vegetable soybean is around 40 t/ha of which the green pod is about 10 t/ha while the shelled bean is about 5/tha. The residue (leaf + stem + hull) contains about 170 kg N 18 kg p and 150 kg K/ha. The residue can be used as an animal feed or they can be incorporated to enrich the soil. World Vegetable Center distributes, to those who are interested in evaluating vegetable soybeans, the Vegetable Soybean Evaluation Trial set annually. Upto 2003, 72 cooperators from 41 countries have received 9,000 seed packets from the Center. Utili- zing these materials 32 improved vegetable soybeans have been released to the farmers in 12 countries. Vegetble soybean can be processed to make diverse products for consumers. Since it is a short duration crop, it can be easily fit in a cereal-based cropping system to diversify the income and nutrition. Consu- mer education and market promotion are essential to introduce this new attractive nutritious crop.

Vegetable soybeans have large seed size (. 30 g/l 00 seeds), nice green pods and beans, higher percent of 2 and 3 seeded pods, the length and width of the green pods are 4.5cm and 1.4 cm respectively, and have slightly sweet taste. Nutritionally vegetable soybeans are much better than sweet peas. It is rich in protein, cholesterol free fat, vitamin B, vitamin E, lecithin and isoflavones.
