245 1 4 _aThe complementary value of cooked Bengal gram and opaque-2 corn for the growing rat
260 _aUnited Kingdom :
_bButterworth & Co. Ltd.,
_c1972.
520 _aBengal gram and Opaque-2 corn were tested alone and in combination with rice and milk as sources of 8.5% protein. Cooking of gram and corn altered the content of lysine and sulfur-containing amino acids. Growth was more rapid when a combination of rice and gram was fed than when either gram or corn was fed alone. Essential amino acids except threonine and phenylalanine were higher in plasma of rats fed gram or gram plus rice than only corn and sorghum. Growth and nitrogen deposition of rats fed a combination of gram, rice, corn, and milk was superior to that of rats fed gram, rice and milk at 8.5% protein, indicating that replacement of rice by Opaque-2 corn was beneficial. A combination of gram and Opaque-2 corn that supplied 11.5% protein induced excellent growth due to the supplementary effect of essential amino acids in these two sources.
