N2  - The purpose of this publication is to help wheat growers, grain dealer, millers, and other agricultural workers identify the different varieties of hard red winter wheat and thereby select a variety having the desired milling and baking quality. The identifying characteristics are presented in a simplified, non-technical manner, based on the morphological characteristics of both the kernel and head of the more important commercial varieties
