Inhibitory effects on growth and aflatoxin production of A. flavus in ground corn by sodium chloride, propionic acid and ammonium hydroxide were examined. Sodium chloride at concentrations of 40 and 80 mg/g could inhibit only aflatoxin production while 120 mg/g of sodium chloride inhibited both growth and aflatoxin production of A. flavus in corn after 7 and 14 days of incubation. The additional propionic acid to the corn at concentrations of 500, 1000 and 1500 ug/g enhanced the production aflatoxin whereas 2000 and 2500 ug/g of propionic acid inhibited the formation of aflatoxin.
