Summary, etc. L'analyse de 74 varieties de Triricum durum a permis de mettre en evidence l'existence d'une correspondence très étroite entre la présence des bandes 45 ou 42 dans les électrophorégrammes des gliadines en gel de polyacrylamide et la viscoélasticite du gluten, facteur de la qualité culinaire. Ces résultats ouvrent la voie a l'utilisation de methodes d'électrophorèse pour l'etude et l'amélioration de la qualité chez le Blé dur.

Summary, etc. Analysis of seventy four Triticum durum varieties reveals a very consistent relationship between the presence of the components 45 or 42 in the polyacrylamide gel electrophoretic patterns of gliadins and the viscoelastic properties of the gluten. Such results provide a new mean of evaluation of breeding material for cooking qualify through electrophoretic methods.
