Summary, etc. En este trabajo se hicieron los patrones electroforeticos de diferentes gliadinas y gluteninas de bajo (G-BPM) y alto peso molecular (GAPM), y se evaluó su efecto en la fuerza y extensibilidad del gluten y el volumen de pan de trigos harineros (Triticum aestivum L.). Se probaron dos grupos de 98 líneas, derivadas de las cruzas ‘Rebeca F2000 x Baviácora M92’ y ‘Gálvez M87 x Rebeca F2000’, llevadas de F2 a F6 por el método de la descendencia de una sola semilla, más los progenitores. Las líneas y los progenitores se sembraron en Chapingo y Santa Lucía de Prías, Estado de México, en el ciclo primavera-verano 2004. Se evaluaron propiedades reológicas en los materiales obtenidos mediante el volumen de sedimentación, tiempo de desarrollo de la masa, estabilidad al amasado, tolerancia al sobre-amasado, alveograma-W, alveograma-P/L y volumen de pan. Se identificaron los patrones electroforéticos en geles de poliacrilamida con dodecil sulfato de sodio. Los resultados indicaron que el bloque de ligamiento ωgliadinas/G-BPM (Gli-1/Glu-3) ejerce efecto en las propiedades de la masa y el volumen de pan de las líneas derivadas de‘Rebeca F2000 x Baviácora M92’, pero no así en las de ‘Gálvez M87 x Rebeca F2000’. Las propiedades visco-elásticas de la masa están determinadas tanto por G-APM, G-BPM y ω-gliadinas, aunque el efecto del complejo ωgliadinas/G-BPM (Gli-1/Glu-3) es menor que el de las primeras (GAPM).
