The chemical composition of 74 spring and 41 winter wheat samples grown in Sweden was investigated. Only small differences were observed between the spring and winter wheats and, on a dry matter basis, all samples contained on average 68 starch, 13 crude protein, 12 total fibre, 2.5 crude fat, 2.0 sucrose, 1.6 ash and small amount of fructans, glucose and fructose. The range of variation was 13 per cent units for starch, 9 per cent units for total fibre and 8 per cent units for crude protein. Significant (p less than 0.001) negative coefficients of regression were obtained of total fibre (-0.53) and crude protein (-0.44) on starch. Arabinoxylans (average
